Rice Pudding with Cream Soda

Rice Pudding with Cream soda is probably not everyone's first thought when it comes to making a dessert. We were told about this at a weigh-in, so thought it worth a go!




Ingredients:


4oz Short grain pudding rice
2 cans Diet Cream Soda
Approx 400ml Water (or as required)
1/2 teaspoon Cinnamon
Fromage Frais (to stir in when serving)

Method:

  1. Now, I have to admit this is one of those 'eye-balled' recipes because you really don't know how much liquid to use, it really is down to your preference!
  2. So, to begin, place rice in a large saucepan, add both cans of cream soda, the cinnamon and bring to a boil.
  3. When boiling, reduce to a steady simmer and stir frequently to prevent it sticking.
  4. When it start to really thicken and bubble as one lump, add cold water and keep stirring.
  5. How much water you need depends on how sweet you like the rice, as this helps dilute the cream soda whilst still giving the rice liquid to absorb.
  6. You should put enough liquid in to feed 4 people relatively comfortably. Short grain rice really does swell and can hold a lot of liquid!
  7. To serve, stir through a good teaspoon or two of fat free fromage frais, top with raspberries and enjoy!
