Rice Pudding with Cream soda is probably not everyone's first thought when it comes to making a dessert. We were told about this at a weigh-in, so thought it worth a go!
Ingredients:
4oz Short grain pudding rice
2 cans Diet Cream Soda
Approx 400ml Water (or as required)
1/2 teaspoon Cinnamon
Fromage Frais (to stir in when serving)
Method:
- Now, I have to admit this is one of those 'eye-balled' recipes because you really don't know how much liquid to use, it really is down to your preference!
- So, to begin, place rice in a large saucepan, add both cans of cream soda, the cinnamon and bring to a boil.
- When boiling, reduce to a steady simmer and stir frequently to prevent it sticking.
- When it start to really thicken and bubble as one lump, add cold water and keep stirring.
- How much water you need depends on how sweet you like the rice, as this helps dilute the cream soda whilst still giving the rice liquid to absorb.
- You should put enough liquid in to feed 4 people relatively comfortably. Short grain rice really does swell and can hold a lot of liquid!
- To serve, stir through a good teaspoon or two of fat free fromage frais, top with raspberries and enjoy!
