Carrot & Swede Soup (Using Soup Maker)

Carrot & Swede soup, using some pre-pared vegetables and a soup maker to show just how quick and easy it is to make a healthy lunch, or a starter to a main course! We used to make soups using a stock pot or large pan, but this is a lot easier.


To make soup you tended to need to think well ahead, probably a day to get it all done, then make enough for the freezer, at least that is how we used to do it.

Then, one day at the weigh-in, someone bought a soup maker in as part of one of our taster sessions, and several of us were impressed, so impressed we went out and bought one!


It really has changed our approach to soup. Apart from a little preparation, you can have soup ready to serve in just 26 minutes, chunky or smooth varieties!

Ingredients:

Bag of ready diced carrot & swede
1 Onion chopped
3 to 4 Garlic cloves roughly chopped
Small piece of frash ginger chopped
A few fresh basil leaves, chopped
Salt & Pepper
Vegetable stock cube
Water

Method:







  • Using the plastic measuring jug that comes with the soup maker, add all the ingredients, except the water, to make sure you are under the maximum level.
  • Add the ingredients to the soup maker and using the measuring jug, add sufficient cold water to cover the ingredients, at least up to the minimum fill level.
  • Pop on the blender head, switch on and choose the chunky or purée option (we chose purée on this one).
  • Machine will beep loudly when finished, just switch off at the wall socket.
  • You can leave the lid on to keep it warm if you have made it ahead of time, or, as we would recommend, lifting the lid off to let it cool a little.
  • Serve in bowls with 2 or 3 fresh basil and a little extra fresh ground black pepper.

    We cannot recommend a soup maker highly enough!

    Although we used off the shelf diced vegetables, we just wanted to highlight how easy making soups really is!

    Anything around the £50 is a good price, but we have seen them as low as £28 on Amazon, so worth having a good look around!
