The Big Liver & Bacon Breakfast Fry Up!

This Liver and Bacon meal is a great filler for that post weigh-in feast, as I am sure most of you tend to be a little frugal with what you eat on the days you get weighed! This is as big as a breakfast style meal gets! Yeah.....bring it on!





Ingredients:

Ox Liver (or Lamb, or Pig)
Thick Back Bacon, all visible fat removed
1 Large onion, sliced
2 Eggs
A few sliced mushrooms
Baked Beans
Salt and Pepper
Dry Chilli
150ml Beef stock made with Knorr stock cube
Garlic fry light

Method:

We trialled our new ceramic pan for this, and I have to say, very good for just £9.99 at Lidl! Amazon do a load for similar prices: Ceramic Pans. They do hold heat better, and I have to admit the taste of the food was different, in a nice way!

  • Preheat the pan to a high heat and add a couple of squirts of fry light.
  • Add the onions and bacon and reduce heat to about halfway, and cook the onions until softening.
  • Add the liver, season with salt and pepper and brown one side, and when the blood rises and

    colour starts to change, flip over and do the reverse side.
  • Meanwhile, get the baked beans on a low heat and just check they don't dry out or burn.
  • Heat another saucepan and add more fry light along with the sliced mushrooms. Add a twist of chilli flakes and a little salt and fry in normal way.
  • When mushrooms are cooking, check the liver and add the beef stock, stirring well.
  • Warm another pan with fry light ready for the eggs. When the liver, bacon, onions and stock is looking close to done, crack the eggs into the pan and fry in the fry light.
  • Serve sunny side up, or, if you prefer, flip over to do the reverse.
  • Dish it all on a big plate and enjoy the feat!

Verdict on the pan? For £9.99 we are not complaining! Very good value, and certainly doesn't stick.
