Chicken Fideua (Noodle Paella)

Chicken Fideua, named after the pasta used to make the dish, is fast becoming a very popular alternative to paella due to its simplicity to make! Read on for our version of this very tasty alternative to a regular.








Fideua Pasta

Ingredients:

4 Large Skinless Chicken Thighs (Bone In)*
1 Large onion, diced
1 Red pepper, diced
1 Tin chopped tomatoes
4 Garlic cloves, crushed
700ml Chicken stock
1 Sachet of Paella spices (or use paprika)
Salt & Pepper
Fry Light

Method:

1. Add thighs and sprinkle with spices or paprika. 2. Add the onions and red peppers, cook until soft. 3. Add tomatoes & garlic
  1. Spray a suitable paella pan with fry light and heat, add a little salt and papper then add the thighs, thick side down.
  2. Turn heat down to just under half and sprinkle the paella spices (or paprika) over the thighs and cook for about 25 minutes without moving them!
  3. After 25 minutes, turn thighs over and add the onion and red pepper and continue cooking on the low setting for about another 15 to 20 minutes to soften the vegetables and make sure the thighs are cooked right through.
  4. Next add the chopped tomatoes and crushed garlic and bring to a boil then reduce heat back to the lower setting to simmer.
  5. Add the Fideua pasta and cook in the tomato and chicken juices until most of the liquid has been absorbed.
  6. Add 700ml Chicken stock and bring to a boil, then reduce once again to a steady simmer. Check seasoning and add salt & pepper as required.
  7. Cook until nearly all the liquid has been absorbed, checking periodically to make sure it is adequately seasoned.
  8. Once it has reached a thickness you like, remove from heat and serve!
*If you prefer, pre-cook the chicken thighs in the oven for about 30 minutes to make sure they are cooked through.

TIP: For real authenticity, you can pop the pan under the grill for 5 or 6 minutes to crisp up the top!
