Liver & Bacon....Meet 2 Veg Style!

Liver is one of the healthiest things you can eat! Rich in many vitamins and minerals such as in iron and vitamin C, Liver is listed as one of the top Superfoods by the World Health Organisation! Try our version of a Liver and Bacon, with Pasta!








Here is a version of Liver we pretty much guarantee you have not tried! And, if you are unsure about liver, at least try this, because, cooked properly, liver is delicious, and incredibly cheap to buy as well!

Ingredients:

300g Liver (any) Diced
1 Onion, Diced
1 Red Pepper, Diced
4 Crushed & Chopped Garlic Cloves
1 Pack of Lean Bacon Bits (or make your own!)
200g Macaroni (uncooked weight)
1 Tablespoon Oyster Sauce
1 Teaspoon Dark Soy Sauce
1 Chicken stock cube
400ml Boiling Water
Salt & Pepper
Fry Light

Add the 400ml boiling water to the stock cube, 1 tablespoon oyster sauce and 1 teaspoon dark soy sauce. Leave aside until needed.

Cook the 200g of dried Macaroni according to packet instructions, drain and keep to one side.

1. Add onion & pepper and cook to start softening, 2. Add bacon and cook through, 3. Add liver

Method


  1. Spray plenty of fry light into a saucepan and heat, then add the onion and pepper to start to soften.
  2. After about 5 minutes, add the bacon bits and continue cooking for another 5 minutes until all starting to soften and cook well until all nicely softened.
  3. Add the garlic and stir through to ensure it is mixed in well.
  4. Add the diced liver and cook until nicely coloured on all sides, but try not to cook all the way through.
  5. Add the cooked macaroni and stir through for about 2 to 3 minutes so that the macaroni starts to soak up any juices in the pan.
  6. Add the sauce mix, stir well, bring to a boil and then reduce to a simmer.
  7. Check seasoning and add salt & pepper if required.
  8. Cover pot and simmer for about 5 minutes, or until everything has warmed through and most of the liquid has been absorbed by the pasta and liver.
  9. Remove lid and continue to reduce the sauce until it has thickened to a consistency you like.

Once done, just check the final seasoning and adjust as required!

Serve in bowls, and maybe, just maybe, you might feel different about liver in future!
