Lemon Fanta Chicken

Very quick and tasty dish similar to the traditional Chinese dish of Lemon Chicken. There are a good number of these recipes around, but, as usual, we have taken it and put our own little touches to this to, hopefully, make it even tastier!








Ingredients:

2 Chicken Breasts, diced
1 Onion diced
1 Red Pepper diced
Handful of Broad beans
4 Garlic cloves crushed
2 tsp Ground Ginger
Juice of 1/2 lemon
2tbsp Tomato Passata
330ml can of Diet or Zero Lemon Fanta
Chicken stock cube
Fry Light
Salt & Pepper
Artificial sweetener (optional)

Method:



  1. Make up sauce by combining the lemon drink, tomato passata, ginger, crushed garlic and chicken stock cube (crumbled).
  2. Spray a large frying pan with Fry light, add salt and pepper and heat.
  3. Add onions, pepper and broad beans and stir fry for about a minute or so then add chicken.
  4. Cook until chicken starts to brown and vegetables are nicely cooked.
  5. Add the sauce ingredients and stir well, bring to a boil and reduce to a simmer.
  6. Add juice of 1/2 lemon, cook for a couple of minutes then taste. Add seasoning if required and also add a little artificial sweetener if required.
  7. Continue cooking until sauce has thickened to your preferred consistency.
  8. Serve with boiled rice.
There are lots of different ways you could develop this dish. Try adding a little chilli, or use fresh ginger instead of ground. So many ways to make this, but the above makes a very good starting point!
