Leftover Macaroni Bolognese Frittata

Do you habitually throw food away you couldn't physically eat any more of? We never ever throw anything away, or very rarely, as you can turn almost any leftovers into another quick meal, in our case, lunch.

See how we turned a simple macaroni bolognese into today's lunch.....













This is so unbelievably easy to do, you will have absolutely no excuse to try this, as it takes up next to no time to do! You can even leave it cooking quite happily while you get on with updating your facebook, or just pottering about the house...

Ingredients:

Leftover Macaroni Bolognese
3 Eggs Beaten
Salt & Pepper
45 grams Grated Mozzarella

1. Beat the eggs together with a pinch of salt and a little pepper
2. Warm a small frying pan and warm the leftover bolognese mix in that.
TIP: Add a little water if needed to loosen it up a little.
3. When heated through, turn heat to a very low setting and then pour in the egg mix. Cover if you can, not a problem if you cannot.
4. When egg mix is starting to set, sprinkle mozzarella over the top and pop under a hot grill to finish it off.
TIP: If you don't have an oven safe pan, cover the handle with silver foil to protect it.

When cooked to your liking on top, simply tip out and serve, in this case, with a nice salad.
