Stir Fried Beef in Ginger with Black Bean Sauce

Ginger and beef are a match made in heaven, they just work and our Stir Fried Beef in Ginger with Black Bean Sauce is a great example. Chinese dishes are remarkably easy to reproduce in your home kitchen, all you need is a wok and a few very basic ingredients!







Ingredients:

For the beef marinade:

800g Diced beef, all visible fat removed
1 inch piece of ginger finely chopped
2 cloves of garlic finely sliced
2 tbsp light soy sauce
Marinade the beef
1 tbsp dark soy sauce
1 tbsp rice wine vinegar

Add all the above ingredients in a bowl, mix well and leave to marinade for at least 20 minutes, longer if you
can.

For the black bean sauce:

250ml Beef stock made with stock cube
1 red pepper finely sliced
1 carrot finely sliced
1 pack Mangetout or sugar snap peas
1 tablespoon chopped salted black beans
1 tablespoon finely chopped spring onion
2 tsp light spy sauce
1 tsp dark soy sauce
Fry light

Method:

1. Brown beef and drain, 2. Add vegetables and stir fry, 3. Add Beef, Black beans and sauce/stock and cook through


  1. Heat a wok until very hot, add fry light and then quickly tip in the beef and stir fry until nicely browned.
  2. Drain the beef in a colander and wipe the wok clean.
  3. Place wok back on heat, add more fry light and, when hot again, add the spring onions and quickly stir fry
  4. for a few seconds, then add the remaining vegetables and stir fry about 1 minute.
  5. Add the beef and reheat through thoroughly for about 3 minutes.
  6. Add the black beans and light and dark soy sauces and beef stock and quickly stir fry to ensure everything is well mixed, about a minute or so, then tip into a serving dish and serve immediately.
  7. Serve with noodles or rice. We chose boiled rice.
