Greek Chicken

I had never heard of Greek Chicken before today, and stumbled across this recipe whilst surfing the internet.I liked the look of it so much that I just had to see if we could adapt it! And it is a great one pot meal!










Ingredients:

Selection pack of chicken portions (thighs, legs, quarters), skin removed.
6 to 8 Shallots, peeled
1 Red pepper cut into strips
1 Lemon, quartered
1 Kg New potatoes, halved
200g Cherry tomatoes, halved
Salt and Freshly ground Black Pepper
Fresh thyme sprigs
Garlic fry light

Method:

  • Place chicken pieces into a suitable roasting pot or pan, together with the shallots, halved cherry tomatoes, halved new potatoes, quartered lemons and pepper strips and thyme sprigs
  • Season well with salt and pepper and spray generously with the garlic fry light.
  • Set aside for about an hour so the garlic fry light effectively marinades the ingredients.
  • Pre-heat the oven to around Gas Mk4 / 180 degrees electric, and when hot, place tray mid oven, uncovered.
  • Cook for around 2 hours, checking and turning the tray as needed for an even cook.
  • Check the chicken pieces are cooked (juices running clear) and remove from oven and leave to rest a few minutes.
  • Squeeze lemon over chicken pieces just before serving.
  • Either serve on plates or place on a table and let guests tuck in.
  • You can serve extra vegetables, or leave to go cold and serve with salad and home made coleslaw.
A very versatile dish, suitable for any weather dining!
