Low Fat Fruit Sponge

Cakes are notoriously hard to get right on diets, but this one captured the imagination of a few readers who went away and made what we can only describe as mouthwatering looking creations! So, how could we not have a go at this, and bring to an even wider audience!









Ingredients:

Frylight
4 eggs, separated
1 tub of quark
1tsp baking powder
5tbs granulated sweetener
0.5tsp vanilla extract
3tbsp fat free fromage frais
Fresh fruit of your choice

Method:
  1. Preheat oven to 180C and line 2 sandwich cake tins with baking paper. Spray with fry light.
  2. Whisk the egg whites in one bowl until they reach soft peak.
  3. In another bowl, whisk together egg yolks, half of the quark, baking powder, 4tbsp sweetener and vanilla extract.
  4. Whisk in half of the egg whites.
  5. Fold in the remaining egg whites with a metal spoon.
  6. Divide the mixture between the two sandwich tins, taking care not to knock the mixture too much.
  7. Bake in the oven for approx. 20mins, until well risen and golden brown. A skewer will come out clean when the cake is cooked through. The cake will sink slightly when taken out of the oven.
  8. Leave to cool for 5mins.
  9. Turn cake out and peel off baking paper, leave to cool completely on a cooling rack.
  10. Meanwhile, mix the remaining quark, 1tbsp sweetener and fromage frais.
  11. At this point you can add a handful of mashed strawberries if you wish.
  12. Spread half of the mixture on top of one of the cakes.
  13. Cover with a layer of fruit
  14. Place the second cake on top and cover with the remaining mix.
  15. Decorate with remaining fruit.
