Chicken Chow Mein

Everyone loves a Chinese meal, be that a sit down or a takeaway. And, probably the most popular dish of them all is the Chicken Chow Mein! Chow mein is one of the easiest Chinese dishes to learn, and is also one of the most filling. Here is our version of this very popular dish, and we have, of course, given this the Meet 2 Veg makeover....!





Ingredients:

750g Diced Chicken (Breast, Thigh, Leg meat, your choice).
1 333g Bag of ready prepared stir fry vegetables
1 250g pack Vitasia Chow Mein Noodles (from Lidl)
2 tbsp Light Soy Sauce
1 Tbsp Dark Soy Sauce
2 Tbsp Oyster Sauce
Garlic Fry Light
Salt

TIP: For vegetarian version, substitute chicken for quorn and leave out the oyster sauce.

First, cook the noodles according to the instructions and set aside

Method:













  1. In a suitable sized wok, squirt plenty of garlic fry light, add a pinch or two of salt and brown off the chicken pieces.
  2. When done, drain in a colander, reheat wok, add a little extra fry light and add the vegetables. Stir fry for around 1 minute
  3. Next, add the drained chicken pieces and continue to stir fry for another couple of minutes
  4. Then, add the cooked noodles to the wok and continue to stir fry the ingredients. TIP: You can cut the noodles to more manageable lengths if you prefer.
  5. Turn the heat down and add the light soy sauce and dark soy sauce and make sure you coat everything as best you can!
  6. Then, add the 2 tablespoons of oyster sauce and mix to ensure an even coating. TIP: If you wish, mix the soy sauces and oyster sauce first and add together. 
  7. Once all the ingredients are well mixed together and all heated through (about 5 minutes), tip into a large serving bowl and place on table.
  8. We also make up a steamed rice to go with this, adds bulk!
  9. Serve in Chinese style bowls with chopsticks!
