Ham, Cheese and Onion Omelette with Salad

Omelettes are so versatile, you can add pretty much anything to one to create a tasty and filling meal. Chuck in some ham, onion, even a little cheese, and you have a lunch that will satisfy you until dinner time!





Ingredients:

5 Eggs (small) beaten
2 Slices of Yorkshire Ham, fat removed, chopped
1 Small onion finely chopped
35g Grated Cheddar cheese
Salt
Pepper

For the Salad:

Mixed Baby leaf salad from a ready made pack!
Tomato
Cucumber
Radish
Spring Onion

Method:
  • Arrange the salad on a plate as you like!
  • Beat the eggs and season with salt and pepper and add the cheese and ham. Leave to one side
  • Heat a frying pan with a little fry light and then add the onion and cook until softened.
  • When done, add the onion to the egg mix with the other ingredients, mix well and add back to the frying pan.
  • Cook on a low heat until the base is browned and the top just starting to set.
  • Either flip the omelette to cook the top, or, as we did, place under a hot grill to finish off!
  • Serve hot with the salad.
  • Any leftovers can be used for packed lunch or a snack later in the day!
