Diet Coke Chicken: Fakeaway Style Recipe

Well, with everyone going a little fakeaway crazy, a bit of coincidence that we did this recipe for Diet Coke Chicken, the Meet 2 Veg way! Yes, this is a well tried recipe, but we decided it needed updating, so changed a couple of things and we ended up with what we can only describe as a Kung Po style Chicken dish! 












Ingredients

400 grams Diced Chicken Breast
1 Onion Sliced and Diced
1 Red Pepper Diced
3 Carrots Jullienned
3 Garlic cloves Finely Sliced
330 ml Can Diet Cola (we used Lidl Freeway cola)
6 Tablespoons Passata
Balsamic Vinegar
Dry Chilli
Chicken Stock cube dissolved in 100 ml boiling water
Salt and Pepper
Fry Light

Method


  1. First, add the finely sliced garlic to the chicken stock mix and leave to steep in the liquid.
  2. Heat a pan with fry light and a generous pinch of salt and pepper, add the onions and carrots and stir fry until starting to soften.
  3. Add the chicken, and continue stir frying until Chick starts to brown.
  4. Add red pepper and stir fry all together for a couple of minutes
  5. Add dry chilli. I use a chilli mill, like a pepper mill, so i can add it a bit at a time until just right. Stir well to ensure all is mixed and cooking well.
  6. Add can of diet cola to chicken stock along with the 6 tablespoons of passata and the balsamic vinegar. Mix well and empty liquid into the pan.
  7. Bring to a boil and continue cooking until liquid reduces and you end up with a good thick, sticky sauce.
  8. Check periodically to see if you need to add more seasoning or chilli.
  9. Once sauce is nice and thick, serve with boiled rice.
  10. If you want it slightly spicier, add more chilli to your portion with the Chilli Mill if you have one.
  11. This is a really nice tasting plate of food. It reminded of a Kung Po Chicken you get at decent Chinese Restaurants and some good Takeaways.
  12. We used fresh chicken, not frozen, as many recipes suggest using. The chicken, doing it our way, stayed lovely and moist!

This served two of us with one good serving and a decent second helping. To feed 4, you will need to add perhaps around 200 grams of extra chicken, a little more veg, but you won't need any extra liquid!
