Garlic Vinegar Chicken

This is a Northern Chinese style dish, and usually involves using a whole bird and both steaming and deep frying! So, we've adapted the recipe to use chicken breast and no deep frying or steaming! This is a very flavoursome Chinese dish that you will want to repeat again and again!

1 tbsp finely chopped garlic
3 tbsp finely chopped spring onions
3 tbsp light soy sauce
2 tbsp white rice vinegar
1 inch piece of fresh ginger finely chopped

- Heat a wok with the fry light and when really hot, add the diced chicken breast
- Stir fry for a good 10 minutes to prevent the chicken from sticking and to make sure it cooks and browns all over
- After about 10 minutes, add the ginger, garlic and spring onions, stir-frying continuously to prevent burning.
- After about a minute, add the soy sauce and vinegar and stir in well.
- Stir the mix for another 3 minutes or until the sauce has thickened nicely.
- Empty into a serving bowl and serve immediately
